Chocolate Pizza

Chocolate Pizza  

Pizza and chocolate – two of our favorite foods. And when combined, even better.

The base of this dessert pizza is very rich, chocolatey and chewy, and the toppings of tart and passionfruit and kiwifruit help to balance out the sweetness.

Dietary: Gluten free, dairy free, vegan  

Prep time: 10 minutes  

Freeze time: 1 hour

Serves: 4

Base

1/3 cup coconut oil, melted

1 tsp vanilla extract

3 Medjool dates, pitted and chopped finely

1 cup almond meal

4 Tbsp of cacao powder 

A pinch of salt

Topping

½ cup coconut yogurt 

1 kiwifruit, sliced

Pulp of passionfruit

Freeze-dried raspberries

 

Line an oven tray with baking paper.

To make the base, melt the coconut oil gently on a low heat.

Once melted, add in the vanilla extract and chopped dates.

In a separate bowl, mix together the almond flour, salt and cacao powder.

Add it to the wet mixture, and combine ingredients together.

Evenly roll out the base mixture into a circle shape on the lined tray.

Place the tray in the freezer, and freeze for 1 hour.

Once the base is firm, top the base of the pizza with the coconut yogurt, followed by the kiwifruit, passionfruit and freeze-dried raspberries.

Store in an airtight container in the fridge, where it will keep for up to 1 week.
